Apple and pear crumble (gluten and sugar free)

I felt like apple crumble all day today, so I decided to try and make a new recipe to feed my craving. It's sugar and gluten-free and only took 10 minutes to prepare, before going in the oven. Because there is no gluten, it is quite crumbly, but that is part of the charm of a crumble. You must serve this with whipped cream... Heavenly! 


The ingredients for 4 servings:
1 apple
1 pear
A small handful of dried cranberries
50g butter
Pinch salt
50g coconut flour
50g shredded coconut
30g xylitol
1 teaspoon cinnamon 


Peel and core the apple and the pear and cut it into smallish pieces. 


I cooked my fruit in the microwave for 5 minutes, but you could also steam it if you prefer. 

In a food processor or blender, blend the butter, salt, coconut, coconut flour, cinnamon and xylitol for a couple of minutes until it forms a crumble. If it is too dry, add a little more butter. 


When the fruit is cooked, scatter some dried cranberries over the top. 


Then loosely spread the crumble mixture over the top, and bake the crumble for 15 to 20 minutes at 180'C, or until the topping has started to go brown. 


Serve it warm with lots of whipped cream!
