Caveman's Balls


I found this recipe on Pinterest (by Ditch the Carbs) and I've been keen to try it out. These little balls of yumminess are delicious and pretty healthy too. Perfect if you feel like a little something for dessert or with a cappuccino in the afternoon.

This recipe makes 20 balls.

Ingredients: 
75g nut butter (I used almond nut butter)
25g coconut oil
40g unsweetened desiccated coconut (shredded coconut)
35g chia seeds
1 tablespoon unsweetened cocoa powder
2 tablespoons of xylitol
1 teaspoon cinnamon
1 tablespoon coconut flour
Optional: 25g chocolate chips

I found that the easiest way to measure all of these ingredients was to weigh everything in the same bowl. I have a digital scale, which makes it very easy. I measured mine straight in the food processor bowl so there was absolutely no wastage.


Blend them together in the food processor for a minute or two until the mixture is a chocolatey, smooth bowl of gorgeousness. 


Place the mixture in the fridge for about an hour, so that the mixture hardens a little. It makes it easier to roll.

Then roll the mixture into 20 balls and place on a plate. 


Roll the balls in some more coconut, cocoa powder or ground nuts.



Store in the refrigerator to keep the balls firm.
