Two ingredient banana and egg pancakes

My dear friend Caryn told me about this recipe. It is so simple and quick to make, and you only need two main ingredients. It's naturally Paleo and gluten-free and makes a super breakfast. I added a few extra things to give it a little more flavour, and they turned out so well.

I served mine with whipped cream and strawberries. They go well with peanut butter too!



Ingredients for 2 servings:
2 medium bananas (slightly less ripe bananas work best)
4 eggs
A pinch of salt
A teaspoon of ground cinnamon
A few drops of vanilla extract
Butter or oil for frying
Toppings of your choice, for example: whipped cream, berries, preserves, nut butter etc.

Option: add 1/4 teaspoon of xanthum gum, which acts as a binding agent. 


Place all of the ingredients in a mixing bowl. 


I just used a hand blender to mix the whole lot together. Blend it until it is smooth. 


Then, heat a frying pan with a little butter or oil. 


Keeping the heat on a medium to low heat, pour some of the mixture onto the frying pan. Watch it carefully. When it starts to bubble, like in the picture below, gently loosen the sides of the pancake and flip it over to cook the other side. 



Keep the cooked pancakes warm in the oven while you cook the rest of the batch. I made 8 pancakes out of this mixture - 4 each!

Serve them with toppings of your choice and enjoy!
