Roasted radishes and pumpkin


I'm always on the look for new interesting vegetable ideas. Someone mentioned to me that radishes are great for roasting. Thought I'd give it a try this evening, so I roasted them with some pumpkin pieces. The radishes taste a bit like a cross between a roast potato and a roast onion - quite delish!

What you'll need: 
Pumpkin, peeled and chopped into pieces
Radishes 
Coarse salt
Olive oil
Rosemary, preferably fresh stalks


In an oven dish, place your chopped vegetables. The radishes work nicely if they are cut into quarters for roasting. Brush the vegetables lightly with some olive oil. Then crush up some salt and sprinkle over the veggies. Lastly, place a few pieces of Rosemary over them.

Roast at 220'C for 30 to 40 minutes, until the veggies are soft and browned on the edges.
