Sweet potato and avocado salad


This salad is based on one of my mom's favourite recipes. I can guarantee you, everyone will have seconds! 

You need:
2 large sweet potatoes
1 small avocado
2 generous tablespoons of mayonnaise
3 tablespoons of Greek yoghurt
1/2 teaspoon of garlic
A pinch of salt
1 teaspoon of honey
1 dessert spoon of lemon juice or apple cider vinegar
A few fresh basil leaves
A pinch of paprika


Slice up the sweet potatoes about 7mm thick. Place them on a baking tray and brush them with olive oil.

Grill them until they are nicely browned. It should take about 15 minutes. 


Let the sweet potato cool and then arrange it however you like on a plate or platter. 


To make the dressing, just combine the whole lot in a small blender and whizz it up until it is smooth. 



Generously spread the dressing over the sweet potatoes.

Serve it cool.
