Parma ham salad with blue cheese, strawberries and nasturtium flowers


I have just returned from 2 weekend in Spain. The cured meats in that part of the world are fabulous. We discovered two different types of cured ham in Spain: Jamon Serrano and Jamon Iberico. They are similar to Parma Ham, but nicer in my opinion. They are made from pork where the pigs are free range, and allowed to stuff their bellies with acorns.

We brought back a little bit of this ham which is the inspiration for this summer's day lunch.


Slice an assortment of fresh lettuce leaves and arrange them as a base on your plate. I added a few torn mint leaves as well. 

Then:
Add a few strawberries, sliced into 1/8th pieces
A few thin slices of cucumber
Crumble about 25g of creamy blue cheese on top of each salad
Tear up the ham and arrange it over the salad
Sprinkle over some toasted seeds

Drizzle the salad with reduced balsamic cream and good olive oil. I used a nasturtium flower for decoration. 

We served ours with a glass of champagne, to celebrate being back home. Delicious!
