Bacon salad with Parmesan shavings and roasted vine tomatoes



I found these beautiful organic tomatoes on the vine. I grilled them with a few slices of free range streaky bacon until the tomato skins burst and the bacon was crispy and browned. 



I used Cos lettuce and a few rocket leaves as the base for the salad. 


Grill an onion, cut into matchsticks, with a little olive oil, until slightly browned and soft. 


Then, using a vegetable peeler, slice off thin slices of Parmesan cheese.



Cut up the bacon into bits, and arrange the bacon, tomatoes, cheese and onions over the leaves. 

Then, to make the dressing, blend together:
1 peppadew
60ml olive oil
15ml lime juice
5ml honey
5ml Apple cider vinegar
1 generous teaspoon of whole grain mustard
A few fresh mint leaves
A pinch of salt



Drizzle generously over the salad.
