I've seen a few posts about macaroni cheese recently, which inspired me to try something a little different! This is made with cauliflower instead of macaroni, and is even more tasty than the traditional favourite.

Almond and raspberry meringue roulade
This is a new dessert which I am trying for a family lunch today. Pavlova is always a hit, and with this being a bit similar, I thought it would be a nice new option to try out. It looks particularly impressive with the beautiful red fruits on the white meringue. The meringue is so delicate, that it just melts in your mouth. I'll definitely be making this one again!

This is an impressive looking breakfast, which is fairly easy to make for a group of people. It's vegetarian too, so a good option for those poor souls who don't eat bacon.

Lamb stew with dates and butternut
I recently found a super supplier of lamb products in the Karoo. You place your order online, and he delivers (personally) to your home once a month. For some reason, the lamb in the Karoo just tastes different. It is incredible... I had a couple of packets of lamb "potjie" which I have been wanting to use.

Dried Apricot and Whiskey Jam
This is my mom's fantastic jam recipe. I like it, because you can control how much sugar you are putting in, and you can be sure that it has lots of chunky bits of fruit in each bite. It's remarkably simple (I always thought that jam was a big job), using dried apricots as the main ingredient. It makes one and a half bottles of jam.

Almond and sunflower seed bread
This is a new bread recipe which I tried out. I based the recipe on The Real Meal Revolution's Almond and Poppy Seed Bread, but I made a few changes. The bread turned out beautifully. It's a tasty, nutty bread and very filling. It's naturally gluten-free and low carb too. It made a decent size loaf.

Salmon cream zucchini "pasta"
I told you I couldn't get enough of my new julienne peeler... Here is another zucchini "pasta" recipe! This one is made with fresh Scottish salmon, cream, spinach, lemon and avo. It's very filling, and full of the good fats. It took 15 minutes from start to finish to prepare (and even less to devour).

Smoked Haddock with Lemon Cream Sauce
I wasn't going to blog this, but when I realised how nice it was going to be, I thought that it would be a good idea to document what I did... The creamy lemon sauce went so beautifully with this flavourful fish. I served it with Cauliflower Mash.

Green pepper Melanzane
I have so many aubergines and peppers growing in my garden. So, I thought of using them together in a Melanzane.
Paleo pumpkin bread - another one!
I tried a slightly different take on the pumpkin bread which I made a few weeks back. This one is just as delicious. This was a bit simpler, as I didn't roast the pumpkin - I just cooked it in the microwave.
Crustless Broccoli, Oyster Mushroom and Chorizo Quiche
I haven't posted anything for a while, but hopefully this quiche will mark my return! It is a crustless quiche, so naturally gluten-free and low carb, and full of goodness and flavours.

Bacon, mushroom and sherry cream "zucchini pasta"

Coconut ice semifreddo
This is a more grown-up version of coconut ice. It's a coconut ice flavoured ice-cream. You don't need an ice-cream make to make it, which is a bonus. The recipe is gluten-free, but it does have some sugar in it, so it's not low-carb. I made it for our New Years Eve dessert.

Avocado Ritz
My gran gave me these beautiful starter bowls. They are made of a delicate crystal, and are a bowl within a bowl. As she was joining us for a New Years Eve dinner, I wanted to incorporate them into the meal. A chilled Avocado Ritz was the perfect thing, and went perfectly with the main meal, which was a very decadent seafood platter of langoustines, tiger prawns and kabeljou.

Once you taste zucchini pasta, you'll wonder why you ever bothered with the traditional stuff. Sheesh - this dish blew my expectations away.

Roasted Table Queen and red pepper salad with radicchio, pumpkin seedsand honey mustard chilli dressing
I found the most interesting little squashes this morning - they are called Table Queens, and they are baby pumpkins. I made this as one of the side dishes to have with a barbecue and it went really well.

I have never made oxtail before - the funny little bones have always freaked me out. By special request, I pulled out my gran's old recipe, made a few tweaks, and it turned out beautifully!

Spicy breakfast nut and seed muesli
If you are looking for something which is a paleo, gluten-free, LCHF option to have with yoghurt, this may be your answer. It's a granola or muesli which is made with spices, nuts and seeds and toasted in the oven.

Salmon trout with ginger orange glaze and zucchini chips
This whole meal took me twenty minutes to prepare. The orange and ginger glaze gives a delightful tang to the trout. You can use Norwegian or Scottish salmon here too.
Carrot, date and banana gluten-free muffins
I'm on the hunt for yummy gluten-free treats. These were kind of an experiment, but, I think they turned out really well. In fact, so well, that we decided to skip dinner and have a few of these each instead!
