Paleo Chocolate Brownies


These brownies are made with sweet potatoes as the main ingredient, and are the most delicious brownies I have ever tasted (in my unbiased opinion, haha!).They are moist and decadent. They were pretty easy to make, and inexpensive too, which is often a challenge with Paleo baking.



Ingredients for one tray of brownies:

Brownies
2 medium sweet potatoes (raw)
125ml cacao powder
2 eggs
125ml melted coconut oil
100ml coconut sugar
5ml vanilla extract
10ml baking powder
3ml salt
Optional: 30ml coconut flour (if you prefer them a bit less moist)

Topping
100g dark chocolate
50ml coconut oil
pinch salt

Peel and slice the sweet potatoes. Place the pieces of sweet potato in a food processor and mince the sweet potato for a couple of minutes. This should make approximately 500ml minced sweet potato.


Then, add the eggs, cacao, oil, flour (if using), sugar, vanilla and salt. Mix it again until everything is combined in a smooth batter. Lastly, add the baking powder and mix for a short bit.


Grease a baking pan and pour the brownie mixture into it. It's quite a runny cake batter.


Bake at 180'C for about 40 minutes, until a skewer comes out clean. Allow the brownie cake to cool down before you add the topping.


For the topping, combine the chocolate, oil and a pinch of salt in a saucepan and gently heat it until everything is just melted and smooth, stirring frequently. Do this on a low heat, or you will burn the chocolate.

Pour the melted chocolate mixture over the top of the brownies and allow everything to cool. Because there is coconut oil in the topping, it will harden slightly as it cools.


Store in the refrigerator.
