Fruitcake balls (gluten-free, AIP-friendly, paleo)


These balls are a paleo and AIP-friendly alternative to your traditional fruitcake. The best part is that they take about 15 minutes to make!

Ingredients (for around 28 balls):
130g dried, pitted dates
70g dried peaches or apricots
70g mixed dried fruit (raisins, cherries, orange peel)
2 tablespoons coconut oil
1 tablespoon coconut flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt

Optional: 1 teaspoon of ground carob powder and another teaspoon of cinnamon for dusting


In a food processor, combine all of the ingredients together. 

Let the food processor run until the mixture starts to come away from the sides and form a ball. At this point, it will be ready to roll.


Pinch off smallish pieces of the mixture and roll it between your hands to make a ball. About the size of a Lindor ball (yummy!)


Once you have rolled all of the balls, you can either gently roll each one in a mixture of carob powder and cinnamon (or just cinnamon) or dust some of the powder mixture over the balls. Pop them into the refrigerator for an hour or so, just to let them harden a little. The coconut oil is liquid at room temperature (especially in summer when it is warm). 

These will keep perfectly in the fridge for at least a week (if they last that long!)
