Coconut date balls (AIP-friendly)


I needed to find something that was AIP-friendly that fitted the category of a sweet treat. These tasty little coconut balls are absolutely delicious. They are naturally gluten-free, nut-free and egg-free. Very quick to make and they store well in the refrigerator.


Ingredients:
100g fresh medjool dates (that's about 10 dates. I weighed the dates after the pits had been removed)
85g coconut oil (1/3 cup)
90g shredded / desiccated coconut (1 cup)
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger

De-pit the dates by slicing down the side and removing the hard stone in the middle.


Put the dates, together with the rest of the ingredients, in a food processor.


Pulse the food processor until everything is combined and the dates are completely incorporated. The mixture should come away from the sides of the food processor bowl and blade.


Pop the mixture in the fridge for an hour to harden slightly. It makes it easier to roll as the coconut oil will harden when exposed to lower temperatures.

Take approximately one tablespoon of the mixture and gently roll it into balls.

Refrigerate to store. They also freeze well!
