Zucchini rosti with smoked salmon and hollandaise sauce

I made these yummy zucchini rosti for dinner with smoked salmon and a hollandaise sauce. It's probably more of a breakfast type dish, but it was really a treat, and nice and light for dinner.


Click here for the recipe for the zucchini rosti. They are fairly easy to make, low-carb and gluten-free. You will need to make these first. The hollandaise sauce gets made just before serving. 


Prepare the hollandaise sauce. Click here for the recipe and instructions. 

Arrange the rosti on your plate. Top each one with a generous serving of smoked salmon pieces (I used about 50g per person) and drizzle some warm hollandaise sauce over the top.
