Cantaloupe, feta, mint and olive salad


Living in sunny South Africa, we are having salads to accompany our gammon and roast chicken for Christmas lunch today. I thought that this cool melon salad would complement it beautifully. 


What you need:
1 ripe cantaloupe (also called spanspek or orange melon)
1 bunch of mint leaves
2 rounds of feta
Black pepper
Black kalamata olives

De-seed and cut the hard skin off the cantaloupe. 
 

Cut it into small squares (or make melon balls if you're feeling crafty). 

Arrange them in a bowl.
 

Crumble the feta cheese over the melon and then sprinkle over the finely chopped mint leaves and the pitted olive pieces. Crack some black pepper over the top and serve. If you are making this ahead of time, chill it in the fridge. Best to make it on the day of consumption. 
 
Drizzle lightly with some olive oil just before serving.
