Bacon, Avo, Egg and Halloumi breakfast


Halloumi is not usually a traditional breakfast ingredient. But, the flavours of the bacon, avo and Halloumi complement each other so beautifully in this quick and easy meal.  

Try and cook everything together so that your breakfast is all ready for serving at the same time. 

Slice the Halloumi into 1/4 inch slices. 


I like to use a griddle pan to fry my Halloumi, as it makes those gorgeous dark lines on the cheese. Brush the pan lightly with a little olive oil so that it doesn't stick. 

Fry the Halloumi for a few minute on each side, until cooked and nicely browned. I fried the bacon at the same time. 


In a separate pan, fry your eggs with a little bit of grass-fed butter to prevent them from sticking. Butter gives a much nicer flavour to the eggs than oil does. 

Serve immediately with a slice of fresh avocado.
