You will need:
1 large brown onion
250g mushrooms (I used Oyster Mushrooms as they are in season)
1 small head of broccoli
125g mature cheddar cheese
100g of chorizo sausage (you could substitute bacon here)
Oil for frying
2 large free range eggs
150ml full cream milk
150ml fresh cream
1 teaspoon of mustard powder
Salt and pepper
Chop up the onion and fry it in a little oil until it goes a bit brown. Arrange this in a lightly greased flan dish (just grease it with some butter).
Next, fry the mushrooms until they soften and begin to brown. Arrange them on top of the onion.
Then, slice the chorizo finely and fry it until the edges go crispy.
Then grate your cheese and sprinkle the cheese and the chorizo on top of the mushrooms.
Ideally using a stick blender, blend together the broccoli, eggs, salt and pepper, cream, milk and mustard until you have a fairly smooth green milkshake.
Pour this mixture over the rest of the ingredients.
Bake it for approximately 35 minutes at 180'C.
Serve with a fresh salad.
