Ingredients:
A quarter of a watermelon
A few black olives
Mint leaves
One round of feta cheese
Juice of one lemon or lime
Black pepper
A quarter of an onion
Cut off the peel and the white pith. Slice the watermelon into smallish cubes and arrange on a platter.
Next, cut up your onion into small pieces and allow this to rest in the juice of one lemon. This will help to lesson the "bite" of the onions.
Then, chop up a generous handful of fresh mint leaves, nice and fine. Arrange over the watermelon.
Cut up a round of feta cheese and sprinkle on top of the salad together with some slices of black olives. Add the onions and the lemon juice. Then grind some black pepper over the top.
Just before serving, drizzle some extra virgin olive oil over the salad.
