Roast asparagus

Asparagus is in season now - if you can find nice thin spears, this is a delicious alternative to steamed asparagus.

You'll need:
1 bunch of thin asparagus
40ml olive oil
1 teaspoon of crushed garlic
A pinch of salt
Black pepper
The juice of one small lemon
Parmesan or other hard Italian cheese

Wash your asparagus, and pat it dry with a paper towel. 


In a dish, drizzle all of the ingredients over the asparagus except for the cheese. Gently shake around the dish to ensure that everything is evenly coated. 


Transfer the aasparagus to a baking sheet, lined with a silicon mat or baking paper (if they stick to the baking sheet they will all break and be ruined). 

Then grate a fine layer of Parmesan cheese over the asparagus. 


Roast in a preheated oven at 220'C for 10 to 15 minutes. Serve immediately.
