Savoury mince and poached eggs


A big pot of savoury mince is so versatile. You can turn it into such a wide variety of yummy meals. 

This morning, I used it to make a healthy, filling breakfast. 

Click here for my savoury mince recipe. It freezes beautifully, and will keep nicely in the fridge for a few days too. 

Make a few poached eggs (I usually do two per person). While the eggs are poaching, heat up your savoury mince. It is advisable to heat your plates too, otherwise the warm mince will get cold quickly! 

At the same time, slice up a few baby tomatoes. Either leave them raw, or cook them quickly in a frying pan with a little olive oil. 

Place a generous spoon of mince in the centre of your plate. Gently place the poached eggs and the baby tomatoes on top. Add a few chopped chives to add some colour and flavour, and serve immediately.
