Gluten-free banana loaf


I had a bunch of very ripe bananas, which were only good for one thing: banana loaf!

You will need the following for the recipe:
4 to 5 over-ripe bananas, mashed
4 eggs
1/2 cup coconut oil
1 teaspoon cinnamon powder
1 cup of brown sugar
1/2 teaspoon of almond essence
1 cup of gluten free cake flour
1 cup of coconut flour
1 teaspoon of bicarbonate of soda

Mix together the bananas, eggs, oil, cinnamon, sugar and essence until nicely combined. Do not overbeat. 
Then add the flours and the bicarbonate of soda and mix until combined, and again, do not overbeat.


Spread the mixture into a greased loaf pan and bake it at 180'C for 45 to 50 minutes, until a skewer comes out clean and the top of the loaf springs back if lightly pressed. 


Spread butter on a warm slice and enjoy for tea!
