If you are looking for something which is a paleo, gluten-free, LCHF option to have with yoghurt, this may be your answer. It's a granola or muesli which is made with spices, nuts and seeds and toasted in the oven.
100g almonds
100g pecan nuts
100g walnuts
Then add:
100g sunflower seeds
100g pumpkin seeds
In a large frying pan, fry together:
3 tablespoons of coconut oil
2 teaspoons ground ginger
2 teaspoons of ground cinnamon
1/2 teaspoon of nutmeg
When this is all melted together, toss all of the nuts and seeds into the spicy mixture and stir fry them together for a minute or two.
Then, tip the whole lot on to a large baking sheet (I have used a silicon mat as a base) and pop it in the oven at 160'C.
Bake together for 15 to 20 minutes, or until the nuts are lightly toasted. Ensure that you check it regularly, as nuts burn easily!
Allow everything to cool completely. Then add a handful of dried cranberries, and store in an airtight container.
Serve sprinkled on top of Greek yoghurt with a few fresh berries for a filling and tasty breakfast.
