Creamy scrambled eggs with grilled Parma ham


I've had a few requests for more breakfast ideas. This is a nice quick breakfast which is easy to make for a group of people, as everything can be cooked in one go at the same time. 

Lay out a few pieces of thinly sliced Parma ham on an oven proof plate. Scatter a few cherry tomatoes around. Place this under the grill for about 5 minutes, or until the ham has just started to go crispy. Don't leave it unattended, as it burns quickly! 



While these are busy grilling, make your scrambled eggs.

Beat together 4 eggs (for two people), 60ml fresh cream and salt and pepper to taste. Place a smallish knob of butter in a non-stick frying pan. As soon as it has started to melt, add the eggs. 


Turn the heat down to low, and slowly cook the eggs, stirring gently all of the time. The slower they cook, the creamier they will be. 

When the eggs are just about cooked, turn off the heat and remove from the stove. The residual heat will continue cooking the eggs, and you don't want them to dry out. 


Arrange the eggs, tomatoes and ham and enjoy immediately!
