Cauliflower rice



The humble cauliflower is so versatile. It can be substituted for many things, rice being one of them. I have used half a large head of cauliflower here. It made enough rice for 4 medium portions. 

You will ideally need a food processor for this, but you can also use a grater if you don't have access to one. 

Using the grater attachment, like the one in the picture below, grate pieces of cauliflower so that they look like rice. I prefer to use this type of attachment rather than a spinning blade, as it is easy to over do the blending with an ordinary spinning food processor blade. 



In a wide saucepan or frying pan, heat a knob of butter (about 40g) and fry half an onion until it is translucent. I used a red onion here (to add a bit of colour), but an ordinary brown onion would be perfect too. 


Add the raw cauliflower rice to the butter and onion and stir fry them together for about 5 to 8 minutes, until the cauliflower is cooked. Take care not to overlook it and make it too soft. 


Just before it is ready to serve, add some finely chopped parsley to it. It's best eaten immediately.
