Poached egg with bacon, bocconcini, rocket, tomatoes


This breakfast looks very impressive and is very easy and quick to make.


In a frying pan, fry rashers of streaky bacon with a little bit of butter until they are starting to go brown on one side. Then turn the bacon over and pop some cherry tomatoes in the pan along with the bacon. When it is almost browned enough, add a few balls of bocconcini or buffalo mozzarella and allow them to melt. Right at the end, throw in some torn rocket leaves (don't do this too early, or they will wilt into nothing!)


At the same time when you add the tomatoes, get some poached eggs going, so that they are ready at the same time. I am using Poach Pods here to poach my eggs. To poach your eggs, float the poach pods in a few centimetres of boiling water with a pot covering the lid to keep the steam in. I usually do 5 minutes so that the yolks are still soft. 


Serve the bacon, tomatoes, rocket and mozzarella with a poached egg on top.
