I have a sick better half this evening, so a good healthy soup is in order for dinner. This is a simple and quick soup to make with broccoli as the main ingredient.
In a pot, fry together one large chopped onion with a tablespoon of butter.
Break one head of fresh broccoli into florets.
Add this to the onion with a one clove of crushed garlic, and a litre of chicken stock. The stock should just come up to almost cover the broccoli. Let it simmer on a low heat for ten minutes.
Then, remove the soup from the heat, add a pinch of salt and some black pepper. Add about 75ml of fresh cream. Using an electric hand blender, blend the soup together until it is smooth and creamy.
