Bacon and mozzarella breakfast


This yummy breakfast doesn't have any egg in it, but would go beautifully with a poached egg popped on top, if you like.
In a non-stick heavy based frying pan, fry together 125g of streaky bacon and a knob of butter together with a handful of cherry tomatoes. Fry the bacon first, and only add the tomatoes towards the end, as they don't take as long to cook.


When the bacon and tomatoes are cooked to your liking, add some mozzarella balls (I used Bocconcini mozzarella here, but Buffalo mozzarella would be a treat too) to the frying pan. About 300g of cheese is about right (or 3 small balls per person). You just need to heat the cheese through until it starts to melt. Add a few chopped herbs to the frying pan just before the cheese is ready. I used fresh basil, rocket and chives here. 

Serve immediately!
