This salad is inspired by Caesar.
Chop assorted lettuce leaves finely into thin strips.
Put a few pieces of streaky bacon under the grill together with some onion pieces and grill them until they are nice and crispy. Chop the crispy bacon into bits.
Fry a few deboned chicken thighs in a splash of olive oil with some chicken spice until properly cooked and a bit brown. Then, cut the chicken into smaller bit-size pieces.
Add a few sundried tomatoes, some avocado, cherry tomatoes, cucumber and roasted seeds to the lettuce. Add a few small pieces of anchovies to this, and then pop the onion, bacon and chicken on top.
To make the dressing: in a blender, blend together 1 teaspoon garlic, 1 Tablespoon of tangy mayonnaise, a tablespoon each of lime juice and apple cider vinegar, 2 anchovy fillets and about 100ml of olive oil. If you like, you can add salt and pepper, but I think that the anchovies are salty enough.
